Elaine Mazur's Dutch Apple Pear Pie

- FILLING
- Apples-Cortland, Granny Smith and a 3rd choice either Melrose, Jonathan, Mac's or any other pie apple of your choice NOTE- yes MUST use 3 dif Apple varieties!!! (or more!) When picking a 3rd variety make sure its sweet/tart and a pie apple!
- Pears- Sweet crisp pears NOTE- 2 or 3 varieties are better than 1 but 1 can be used if thats all thats available just make sure they're sweet and crisp
- 2 TBS butter- melted
- A few shakes of Salt
- 1 tsp Vanilla
- Opt: 1 TBS Apple cider if you have it
- 3 TBS -1/4 cup flour aprox. (I use a handful)
- 1/2 tsp Cinnamon
- 1/4 Cup Light Brown sugar (more or less depends on the apples you choose and how sweet you like it)
- 1/4 Cup White sugar (more or less depends on the apples you choose and how sweet you like it)
- STREUSEL TOPPING
- 1 Cup Flour
- 1/2 Cup Light Brown sugar
- 1/4 Cup White sugar
- 1/4 tsp cinnamon - optional
- Dash of salt
- about 5 TBS Cold butter
- or
- OATMEAL CRUNCH TOPPING
- 1/2- 3/4 cup quick cooking oats
- 3/4 cup packed light brown sugar
- 3/4 cup all-purpose flour
- Dash of salt
- Cold butter
- or
- CINNAMON STREUSEL TOPPING:
- 1¼ cups sugar
- 1½ cups sifted all-purpose flour
- 2 tsp cinnamon
- 6 TBS butter, melted
- Deep dish pie pan
- Crust for deep dish pie pan homemade or store bought whichever you prefer
DIRECTIONS
- Preheat oven 375F
- To measure how many pears and apples you need take empty pie pan that you'll be using and start making layers
- Peel and slice granny smith until they cover the bottom
- Peel and slice pears to cover Granny Smith layer
- Peel and slice Cortland to cover pear layer Then another layer of pears then layer of melrose or jonathan then pears
- Repeat until you have a slightly heaping mound in the pie plate
- When done pour it all into large bowl and mix them all up
- Wash and dry pie pan
- In bowl toss apples and pears w/ lemon juice just a couple drops to stop from browning
- In microwave dish melt butter in microwave
- Add salt, cider and vanilla to butter stir
- Add butter mix to apple and pears and mix well and set aside
- In another dry bowl mix flour, cinnamon and sugars together (reserve about 1 1/2 TBS to put on bottom)
- Pour that into Apple and pear mix and mix well
- Prepare crust poke a couple holes in bottom of crust w/ a fork and put a light layer of reserved flour mix on bottom before adding filling
- Then pour apple pear mix into crust put tin foil around the edges to prevent crust from burning. Bake for 10-15 before adding topping
- Mix up whichever topping you choose either Steursel or Oat crunch
- STREUSEL TOPPING
- Mix flour, sugar, cinnamon and salt together
- Cut in butter 1 TBS at a time until crumbly but still on the dryer side
- or
- OAT CRUNCH TOPPING
- Mix flour, oats, sugars and salt together
- Cut in butter 1 TBS at a time 'till real crumbly and more on buttery side
- or
- CINNAMON STREUSEL TOPPING
- Mix flour sugar and cinnamon then add butter
- Cover pie w/ topping
- Bake at 375F until topping is browned and bubbling is very thick like yellowstone mud pots :)
