  • 2 ducks
  • 1 lrg. yellow onion (chopped )
  • 3 ribs celery (cut lrg. pcs.)
  • 1/2 cup butter
  • 1/4 cup flour
  • 2 sml. Cans sliced mushrooms
  • 1/2 cup light cream
  • 1 tsp. parsley (chopped)
  • 1 pk. Uncle Ben's rice
  • Salt & pepper to taste
DIRECTIONS
  1. Boil duck in water with the cut onion & celery 1-1/2 hr.
  2. Remove duck, let cool & debone,
  3. set meat aside.
  4. Cook rice according to pack..
  5. Melt butter in a skillet & sauté
  6. onions for 4 minutes then stir in
  7. the flour & add mushrooms with
  8. The liquid. Add cream, parsley,
  9. salt, pepper,
  10. Cooked rice & duck meat in a 2-
  11. quart dish. Sprinkle with slivered
  12. almonds.
  13. Bake @ 350 degs. For 25 minutes
