Down Home Mac & Cheese
INGREDIENTS
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- 250g velveeta cheese product, cut up (approx. 1 1/2 cups)
- 2 cups macaroni, cooked & drained
- 1/2 cup old cheddar cheese (shredded)
- 1/4 cup crushed crackers (i love to use ritz - they're so nice and buttery!)
DIRECTIONS
- Preheat oven to 350F
- Melt butter in medium sauce pan on medium heat. Add flour & mix well. Cook 2 min, stirring constantly. Gradually add milk, stirring until well blended. Cook until mixture boils & thickens, stirring constantly.
- Add Velveeta. Cook 3 min or until velveeta is completely melted, stirring frequently.
- Add macaroni, mix lightly.
- Spoon into 2 qt casserole dish sprayed with cooking spray. Sprinkle with the shredded cheese & crackers. Cover.
- Bake 20 minutes or until heated through.
