Down Home Mac & Cheese

INGREDIENTS
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 250g velveeta cheese product, cut up (approx. 1 1/2 cups)
  • 2 cups macaroni, cooked & drained
  • 1/2 cup old cheddar cheese (shredded)
  • 1/4 cup crushed crackers (i love to use ritz - they're so nice and buttery!)
DIRECTIONS
  1. Preheat oven to 350F
  2. Melt butter in medium sauce pan on medium heat. Add flour & mix well. Cook 2 min, stirring constantly. Gradually add milk, stirring until well blended. Cook until mixture boils & thickens, stirring constantly.
  3. Add Velveeta. Cook 3 min or until velveeta is completely melted, stirring frequently.
  4. Add macaroni, mix lightly.
  5. Spoon into 2 qt casserole dish sprayed with cooking spray. Sprinkle with the shredded cheese & crackers. Cover.
  6. Bake 20 minutes or until heated through.
RECIPE BACKSTORY
I'm a huge mac & cheese fan, but have always had trouble finding a recipe that was cheesy enough - my mom (my food hero) passed this on to me - best mac & cheese yet!
