Dolores' Lemon Artichoke Chicken
  • chicken breasts (1 regular package of 4 or so)
  • Flour (to coat chicken)
  • Olive or Vegetable Oil
  • 1 cup lemon juice
  • 2 bags frozen artichoke hearts, quartered
  • white cooking wine, or vermouth to add flavor (we use Reisling)
  • 1/2 jar of green olives
  • 1 stick of butter
  • Pasta or rice (any kind)
  1. Season and Trim chicken breast (using garlic salt, wine seasoning, etc) Coat chicken in flour
  2. Sautee chicken in oil until cooked
  3. Add lemon juice, partially diluted
  4. Add artichoke hearts
  5. Add cooking wine, if desired.
  6. Add water to cover chicken & Simmer for 15 mins
  7. Add green olives
  8. Mix, and serve over rice/pasta
I can't begin to tell you how good this dish is to me.. my Dad and I fight over the left overs
