Deflate your Mate Chickpeas

  • chick peas
  • olive oil
  • tomato purée
  • green onion
  • red pepper
  • cumin
  • paprika
  • crushed chilies
  • roasted garlic
  • lemon vodka
  • lemon zest
  • mint
  1. Heat 1 tbs olive oil in a pan on med
  2. Add 3 thinly sliced green onions and 1 julienned red pepper
  3. Mix in a pinch of cumin, paprika, and crushed chilies, then sauté for 10 minutes
  4. Deglaze pan with a shot of lemon vodka.
  5. Pour in 1 can crushed San Marzano tomatoes.
  6. Add 4 cloves roasted garlic.
  7. Add the zest of 1 lemon.
  8. Add a handful of finely-chopped, fresh parsley.
  9. Add a few torn mint leaves. Stir.
  10. Cook for 5 minutes, add 2 cups of chick peas and warm through
