Date Nut Cake
INGREDIENTS
- 1 cup cut dates
- 1 teaspoon baking soda
- 1 cup boiling water
- 1/3 cup margarine
- 1 cup sugar
- 2 eggs
- 1 1/2 cup sifted cake flour
- 1/4 teaspoon baking powder
- 1 cup chopped nuts
- 1 teaspoon vanilla
DIRECTIONS
- In small bowl combine dates, soda, water, and set aside.
- In separate bowl, cream margarine, sugar, and eggs.
- Sift together flour and baking powder.
- Add to creamed mixture.
- Alternately with date mixture, stir in chopped nuts and vanilla.
- Pour into greased flour tub pan.
- Bake at 350F for 45 minutes.
- Dust with powdered sugar.
