DATE CANDY
INGREDIENTS
- 1/2 cup milk
- 1/4 cup sugar
- 1/4 cup liquid honey
- 1/4 tsp. cinnamon
- pinch of salt
- 1 1/2 cups chopped dates
- 1 cup chopped pecans
- 2 tbsp. butter
- 1 tsp. vanilla
- 2 oz. semisweet chocolate, chopped
DIRECTIONS
- In a saucepan bring milk, sugar, honey, cinnamon and salt to a boil.
- Reduce heat and simmer for 15 to 18 minutes or until thickened and reduced by one third. Remove from heat.
- Stir in dates, pecans, butter and vanilla.
- Spoon into a foil lined 8” square cake pan pressing evenly.
- In a bowl over saucepan of hot (not boiling) water melt chocolate stirring occasionally; drizzle over date mixture.
- Refrigerate for at least 4 hours or until chilled. Remove from pan.
