Cucumber Sauce (Thai)
INGREDIENTS
  • 1 cucumber, peeled and diced
  • 5 Tbsp sugar
  • 1 cup boiling water
  • 1/2 cup vinegar
  • 1 tsp salt
  • 3 red chili peppers, seeded and chopped
  • 2 shallots, finely chopped
  • 1 Tbsp chopped cilantro
DIRECTIONS
  1. Place cucumber in a small non-reactive bowl.
  2. Dissolve sugar in boiling water.
  3. Stir in vinegar and salt.
  4. Pour boiling sauce over cucumbers.
  5. Sprinkle with peppers and shallots.
  6. Cool.
  7. Garnish with cilantro.
