Creamy Lemon-Kissed Chicken Pasta Salad

- Dressing:
- 1 cup lemon low-fat yogurt
- 1/3 cup mayonnaise or salad dressing
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon poppy seeds
- Pasta Salad:
- 2 to 2½ cups (4 ounces) uncooked bow-tie pasta
- 1 can (10 ounces) premium chunk breast of chicken, drained and flaked
- 1 can (8 ounces) mandarin oranges, drained
- 1/2 cup sliced green onion
- 1/2 cup sliced celery
DIRECTIONS
- For the Dressing: Combine the yogurt, mayonnaise, lemon juice, salt, pepper, and poppy seeds in a small mixing bowl; mix well.
- For the Pasta Salad: Cook the pasta according to the package directions; drain and rinse under cold water. Combine the pasta, chicken, mandarin oranges, green onion, and celery in a large bowl. Add the dressing; toss to coat. Cover and refrigerate until time to serve.
