Cornmeal Porridge

  • 1 & 1/2 cups Coconut Milk or Almond Milk
  • 1 & 1/2 cups warm water
  • 1 cup fine yellow cornmeal
  • 1/3 cup brown sugar
  • 1 Cinnamon stick
  • 1 tsp vanilla extract
  • 1/2 tsp almond essence
  • 1/2 tsp nutmeg
  • Pinch of salt
DIRECTIONS
  1. 1: In a medium pot, warm the milk and cinnamon stick.
  2. 2: In a bowl, mix the cornmeal and warm water together until it is smooth.
  3. 3: Add the cornmeal to the milk along with the spices, vanilla extract, almond essence and salt.
  4. 4: Stir everything together and let it simmer for 7-10 minutes. Be sure
  5. to stir it occasionally.
