Coconut curried Chicken and Sweet Potatoes
INGREDIENTS
  • 2 tbsp olive oil, divded
  • 1 lb chicken breast tenders
  • 2 large shallots, finley sliced
  • 1.2 cup coarsely chopped red ionion
  • 2.5 tsp curry poweder
  • 1.2 tsp crushed red pepper
  • 1/2 tsp sea salt
  • 1 large sweet potato, peeled and diced (1/2 size)
  • 1 can (14 oz) coconut milk
  • 2 green onions, chopped
  • 2 tbsp chopped fresh cilantro
DIRECTIONS
  1. Heat 1 tbsp oil in pan over med-high heat. Season chicken with salt and pepper; sauté for 5-7 minutes, or until center no longer pink. Remove chicken and cover.
  2. Add remaining oil to pan. Saute shallots and onion for 3-5 minutes.
  3. Sprnkle in spices and salt.
  4. Add pottoes and coconute milk; bring to boil. Cover andd reduce heat to med-low.
  5. Simmer 10 minutes.
  6. While potatoes are simmering, dice chicken.
  7. Add chicken to curry; simmer 5 more minutes or until potatoes are cooked.
  8. Top with green onion and cilantro.
