Coconut Cream Protein Cookies

- 2 tablespoons coconut butter (not oil)
- 2 tablespoons water
- 2x scoops of @1upNutrition Coconut Ice-Cream Whey Protein
- 1 tablespoon coconut flour
- 2 teaspoons of baking stevia
- 2 tablespoons shredded (unsweetened) coconut
DIRECTIONS
- Preheat the oven to 160C (325F)
- Mix coconut butter and water in a medium bowl
- Add in the 1up Nutrition Whey Protein, coconut flour, and stevia and mix well
- Stir in shredded coconut
- Form the dough into 6 balls and place on parchment-lined baking tray
- Flatten each cookie (with your hand or the back of a large spoon)
- Bake for 4 minutes, and check to see if they are firm. If not, keep checking regularly and remove when firm
- Allow to cool slightly then enjoy!
