Coconut Chews (bar cookies)
INGREDIENTS
- Shortbread
- 3/4 cup butter
- 3/4 cup confectioners sugar
- 1 1/2 cups flour
- Coconut Mixture
- (prepare this while shortbread is baking)
- 2 eggs
- 1 cup brown sugar
- 2 tbsp flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1/2 tsp chopped walnuts
- 1/2 cup flaked coconut
- Glaze
- (Start to prepare glaze 3-5 minutes before shortbread with coconut mixture will finish baking)
- 1 1/2 cups confectioners sugar
- 2 tbs butter
- 3 tbs orange juice
- 1 tsp lemon juice
DIRECTIONS
- Shortbread
- Preheat oven to 350
- Beat butter and sugar together
- Stir in flour with a spoon
- Press dough into the bottom of a 13 x 9 pan
- Bake at 350 for 12-15 minutes
- Coconut Mixture
- Mix all ingredients together
- When shortbread is done cooking, remove from oven and pour coconut mixture on top of the shortbread, spreading evenly.
- Bake at 350 for 20 minutes
- Glaze
- Heat butter in a pan until butter melts.
- Stir in remaining ingredients.
- Smooth glaze onto cookies and let cool.
- Cut into 3 x 1 bars.
