Citrus Glazed Salmon
  • 1 2lb. fresh salmon filet, skin removed
  • Salt and fresh ground black pepper
  • 3/4 cup orange marmalade
  • 2 green onions, sliced
  • 1 clove garlic, minced
  • 2 tsp. dry white wine
  • 1 tsp. grated ginger
  • 1 tsp. Dijon-style mustard
  • 1/4 tsp. cayenne pepper
  • 1/8 tsp. five spice powder (I made my own... omitting the anise!)
  • 3 T sliced almonds, toasted
  1. Preheat oven to 450 degrees.
  2. Rinse fish, pat dry.
  3. Measure the thickest part of the fillet.
  4. Season fish with salt and pepper.
  5. Place in a shallow baking pan.
  6. Set aside.
  7. In a small bowl, stir together marmalade, onions,garlic, wine, ginger, mustard, cayenne, and five spice powder.
  8. Spoon mixture over salmon.
  9. Bake, uncovered, for 4 to 6 minutes per 1/2-inch thickness or until salmon flakes easily with a fork.
  10. Sprinkle with almonds before serving.
I've been trying to work healthier foods into our meals.... this is a yummy way to spice up plain salmon filets. Really easy too! I served with steamed asparagus and crusty bread. Yummy!
