Chicken fajita skewers
INGREDIENTS
- Servings: 4
- 1 lb. boneless skinless chicken,sliced into strips
- 1 green pepper, quartered
- 1 red pepper, quartered
- 2 onions, thickly sliced
- 3 T. lime juice
- 1/3 c. reduced-fat Italian salad dressing
- salt to taste
- flour tortillas, warmed
- Garnish; salsa
DIRECTIONS
- Thread chicken strips evenly onto 4 wooden skewers; thread peppers and onions alternately onto anothers 4 skewers. Combine lime juice and salad dressing in a small bowl; brush chicken and vegetables with mixture. Grill skewers over hot coals, turning occasionally, allowing 7 to 9 minutes for chicken and 12 to 15 minutes for vegetables. Add salt to taste. Serve with tortillas and salsa, as desired. Makes 4 servings.
- Can also substitute chicken with shrimp or beef!
