Chicken fajita skewers
INGREDIENTS
  • Servings: 4
  • 1 lb. boneless skinless chicken,sliced into strips
  • 1 green pepper, quartered
  • 1 red pepper, quartered
  • 2 onions, thickly sliced
  • 3 T. lime juice
  • 1/3 c. reduced-fat Italian salad dressing
  • salt to taste
  • flour tortillas, warmed
  • Garnish; salsa
DIRECTIONS
  1. Thread chicken strips evenly onto 4 wooden skewers; thread peppers and onions alternately onto anothers 4 skewers. Combine lime juice and salad dressing in a small bowl; brush chicken and vegetables with mixture. Grill skewers over hot coals, turning occasionally, allowing 7 to 9 minutes for chicken and 12 to 15 minutes for vegetables. Add salt to taste. Serve with tortillas and salsa, as desired. Makes 4 servings.
  2. Can also substitute chicken with shrimp or beef!
