Chicken and Broccoli

  • 1 1/2 Pounds chicken tenders
  • 3/4 Teaspoon kosher salt
  • 1/2 Teaspoon pepper
  • 1/4 Cup all-purpose flour
  • 3 Tablespoons vegetable oil
  • 1 Large onion, coarsely chopped
  • 1 1/2 Teaspoons curry powder
  • 2 Chicken bouillon cubes
  • 2 Cups water
  • 2 Cups broccoli florets
  • 1 Carrot, sliced
  • 1/2 Cup sour cream
DIRECTIONS
  1. Mix flour, salt and pepper in a shallow bowl and coat chicken. Heat half the oil to medium hot in a skillet and fry chicken until golden on both sides, about 5 minutes per side. Use the rest of the oil to complete the frying of all chicken. Remove from skillet and add curry powder and onions. Cook onions 5 minutes to soften. Add bouillon cubes and water and reduce by half. Return chicken to skillet, add broccoli, carrot and continue cooking an additional 10 minutes. Add cream, stir and serve.
