Chicken Souvlaki Skewers with Tzatziki

INGREDIENTS
  • boneless skinless chicken breast, cut into thin strips (4 strips per breast)
  • 2 tbsp oregano,
  • 1-2 cloves crushed garlic,
  • 1/4 c white wine vinegar
  • 1 tpsp olive oil
  • sliced tomato
  • cucumber
  • red onion
  • feta
  • 1/2 cucumber
  • 1/2 C sour cream
  • 1 tsp salt
  • 1 t powdered garlic
  • warm pita triangles
DIRECTIONS
  1. 2 boneless skinless chicken breast, cut into thin strips (4 strips per breast)
  2. combine 2 tbsp oregano, 1-2 cloves crushed garlic, 1/4 c white wine vinegar and 1 tpsp olive oil
  3. marinate chicken overnight or 4-6 hours and make tziki sauce (recipe below) so the flavors can combine
  4. remove chicken from marinade
  5. skewer with wooden or metal skewers (wooden will need soaked in water)
  6. bake at 300 degrees for 20 minutes or until cooked through
  7. remove and set aside
  8. serving ideas: with sliced tomato, cucumber, red onion, feta and warm pita triangles (recipe below)
  9. Tzatziki Sauce (cucumber sauce)
  10. peel, seed and grate 1/2 cucumber (English cucumber works best) into a bowl
  11. add 1/2 C sour cream (light or full fat since you don't use that much, fat free is gross)
  12. add 1 tsp salt, 1 t powdered garlic
  13. stir to combine and chill
  14. Warm pita chips
  15. slice whole pita into six triangles
  16. spray with olive oil mister to lightly coat
  17. lightly sprinkle salt and garlic powder over triangles
  18. cook at 300 degrees for 10-15 minutes (idea: put them in half way through the chicken cooking time)
  19. remove and serve warm
RECIPE BACKSTORY
This is one of those recipes that sounds difficult but is so easy to do. It's excellent as an appetizer if you are throwing a party or as a meal!
