Chicken Prosciutto Bundles

  • 4 boneless skinless chicken breasts
  • 4 slices mozzarella cheese (1/4 in thick)
  • 8 fresh basil leaves
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 8 slices proscuitto
  • 1 Tbsp olive oil
  1. Place chicken on cutting board. Holding sharp knife horizontal to board, cut a 3 in deep pocket lengthwise in each breast. Stuff each pocket with one slice mozzarella and two basil leaves. Sprinkle chicken with salt and peper; wrap two slices proscuitto around each chicken breast. Heat oil in a large ovenproof skillet. Add chicken and cook over medium-high heat until browned, about 3 minutes per side. Transfer chicken in skillet to oven; bake at 350° for 12-15 minutes or until juices run clear. Internal temperature should read 170°.
