Chicken Gorgonzola

INGREDIENTS
  • 8 boneless, skinless chicken breasts
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3 tbs butter
  • 2 tbs olive oil
  • 3/4 cup chicken broth
  • 1/4 cup heavy cream
  • 1/3 cup Gorgonzola cheese, crumbled
  • 3/4 cup walnuts, chopped
  • 2 tbs fresh basil, chopped
DIRECTIONS
  1. Season chicken with salt and pepper.
  2. In a large skillet, melt butter with olive oil over medium heat.
  3. Add chicken, turning until done.
  4. Place chicken on serving platter.
  5. Add the broth to the skillet and boil for 2 minutes. Add remaining ingredients, and cook, stirring, until cheese has melted.
  6. Remove from heat and pour over chicken.
