Chicken, Spinach, and Gouda Crustless Quiche

  • 2 TBSP Kerrygold butter
  • 2 TBSP diced onion
  • 1 - 12 oz package frozen spinach (thawed and squeezed of liquid)
  • 5 eggs (beaten)
  • 1 1/2 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups smoked gouda (shredded)
  • 1 rotisserie chicken (shredded)
DIRECTIONS
  1. Shred the chicken and set aside.
  2. Heat the butter in a small skillet over medium heat. Saute the onion until it is translucent, about 6-8 minutes.
  3. Preheat the oven to 375. Spray a pie pan with cooking spray.
  4. To the shredded chicken, add all of the remaining ingredients. Stir until combined, then add to pie plate.
  5. Bake in the preheated oven for 35-45 minutes, or until the eggs are set. Cut into 6-8 pieces and serve.
