Chicken, Spinach, and Gouda Crustless Quiche
INGREDIENTS

- 2 TBSP Kerrygold butter
- 2 TBSP diced onion
- 1 - 12 oz package frozen spinach (thawed and squeezed of liquid)
- 5 eggs (beaten)
- 1 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups smoked gouda (shredded)
- 1 rotisserie chicken (shredded)
DIRECTIONS
- Shred the chicken and set aside.
- Heat the butter in a small skillet over medium heat. Saute the onion until it is translucent, about 6-8 minutes.
- Preheat the oven to 375. Spray a pie pan with cooking spray.
- To the shredded chicken, add all of the remaining ingredients. Stir until combined, then add to pie plate.
- Bake in the preheated oven for 35-45 minutes, or until the eggs are set. Cut into 6-8 pieces and serve.
