Chewy Molasses Cookies

  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1 cup sugar
  • 1/3 cup molasses
  • 1 egg
  • 2 cups flour
  • 3/4 tablespoon ginger
  • 1 1/4 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • dash of nutmeg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
DIRECTIONS
  1. Preheat oven to 325 degrees F.
  2. Cream butter, sugar, egg, molasses and vanilla until smooth.
  3. Mix flour, spices, salt and soda in separate bowl. Add half dry mixture to wet until smooth. Repeat with the rest of the dry ingredients. You may want to add more flour depending on the desired consistency of cookies.
  4. Drop by the greased teaspoonful onto prepared sheets 2 inches apart.
  5. Bake 10 to 12 minutes, until brown and still slightly doughy. Enjoy!
