Cheese, Rice and Cold Tomato

  • 1 cup cooked rice, hot
  • 3/4 cup shredded cheese
  • 1/2 cup diced tomato, refrigerated
  • oregano
  • salt
  • pepper
DIRECTIONS
  1. Alternatives: Any fresh herbs - basil, thyme, etc.
  2. Black Beans for protein - go easy or you'll end up with plain old rice n beans.
RECIPE BACKSTORY
This was one of the first recipes I ever learned - It is so good and very easy. Toss in some black beans for added protein.
