Cauliflower "Potato" Salad

INGREDIENTS
- 1 1/4 cup cauliflower,cooked and chopped
- 1/4 cup celery, chopped
- 1 hard boiled egg, chopped
- 1 to tbsp light mayo
- 1 tsp mustard
- 1/8 tsp salt
- 1/8 tsp onion powder
- pinch of pepper
- pinch of paprika
DIRECTIONS
- Steam cauliflower until it reachers the same texture as cooked potatoes.
- Rinse in cold water to cool and pat dry with a paper towel, chop the cauliflower into small bites.
- Mix into a bowl with celery, eggs, mayo, mustard, onion powder, salt and pepper. Mix well. Sprinkle with paprika. (This is equal to 1/6 of a protein and 3/6 of a vegetable serving you would need in a day).
