Cauliflower "Potato" Salad

INGREDIENTS
  • 1 1/4 cup cauliflower,cooked and chopped
  • 1/4 cup celery, chopped
  • 1 hard boiled egg, chopped
  • 1 to tbsp light mayo
  • 1 tsp mustard
  • 1/8 tsp salt
  • 1/8 tsp onion powder
  • pinch of pepper
  • pinch of paprika
DIRECTIONS
  1. Steam cauliflower until it reachers the same texture as cooked potatoes.
  2. Rinse in cold water to cool and pat dry with a paper towel, chop the cauliflower into small bites.
  3. Mix into a bowl with celery, eggs, mayo, mustard, onion powder, salt and pepper. Mix well. Sprinkle with paprika. (This is equal to 1/6 of a protein and 3/6 of a vegetable serving you would need in a day).
