Caribbean Sweet Corn & Vegtable Bake
INGREDIENTS
- 2 Tbs olive oil
- 2-1/2 tsp ground cumin( used a little less)
- 1 tsp salt( did not use)
- 3/4 tsp sugar( did not use)
- 3/4 tsp dried thyme, crumbled
- 1/2 tsp ground black pepper
- 1/8 tsp red pepper
- 4 ears of corn shucked( used canned as I did not have fresh)
- 1 pound of plum tomatoes( about 6 quartered, about 2-1/2 cups)used 4
- 12-oz small thin skinned potatoes about 4, cut into quarters( about 2-1/2 cups) used (1) very small red skinned potato.
- 2 medium onions, cut into thin wedges( about 2 cups)
DIRECTIONS
- Oven set at 450( mine was set at 375)
- Mix together the oil, cumin, salt, sugar, thyme and both peppers. Mix well and add all vegtables. Toss. Place in a 15x10" roasting pan. Cover and bake for about 30 minutes. Stir once or twice during baking.
