Cape Cod Clam Fritters
  • 1 pint of clams
  • 2 eggs
  • 1 1/2 to 2 cups of flour
  • 2 tsp baking powder
  • salt and pepper to taste
  1. 0Use clam water (or milk) to make fritter batter. Clean clams, drain and chop. Beat eggs; add flour and baking powder and enough liquid to make batter, should be just enough to make stiff and hold shape. Add chopped clams and season with salt and pepper. Drop by spoonfuls into 1/4" oil in frying pan. Serve with tarter sauce.
