Cajun Shrimp Jambalaya
INGREDIENTS

  • 2 teaspoons olive oil
  • 1 yellow onion
  • 2 cloves garlic
  • 1 pound chicken
  • 3 sausage links
  • 4 cups chicken broth
  • 2 cups uncooked brown rice
  • 1 cup celery
  • 1 green bell pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon basil
  • 1/2 teaspoon thyme
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • 1 pound shrimp
DIRECTIONS
  1. Heat oil in a large pot over medium-high heat. Add the onion and garlic and cook for 3 minutes, stirring constantly.
  2. Then add the chicken and sausage and cook for 5 minutes.
  3. Once the meat is mostly cooked, add the broth, rice, celery, bell pepper, and spices to the pot.
  4. Bring to a boil then reduce heat to medium-low, cover, and simmer for 45 minutes.
  5. Lastly, add the shrimp and cook for another 5 minutes.
