CROCK POT BAKED BEANS

INGREDIENTS
  • 1 lb. navy or great northern beans (2 1/3 cups)
  • 8 cups cold water
  • 1/2 tsp. salt
  • 1/4 lb. salt pork or bacon
  • 1 chopped large onion (1 cup)
  • 1/2 cup molasses
  • 1/3 cup packed brown sugar
  • 1 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
DIRECTIONS
  1. 1/8 tsp. pepper
  2. Rinse beans.
  3. In a large saucepan bring beans, water and salt to a boil; reduce heat.
  4. Simmer, covered, 1 1/2 hours.
  5. Pour beans and liquid into a bowl; cover.
  6. Chill overnight.
  7. Drain beans, reserving 1 cup liquid; place in an electric slow crockery cooker.
  8. Add 1 cup reserved cooking liquid.
  9. Stir in salt pork, onion, molasses, sugar, dry mustard, salt and pepper.
  10. Cover; cook on low heat setting for 12 to 14 hours.
  11. Stir before serving.
  12. Makes 6 to 8 servings.
