Broccoli Slaw

- 2 Heads of Broccoli
- ½ Red Onion, diced
- 1 Red Bell Pepper, diced
- 1 stalk Celery, diced
- 1 Carrot, peeled & shredded
- 2 cloves Garlic, grated / minced
- 1 Tbsp. Fresh Chives, chopped
- ¼ C Fresh Parsley, chopped
- ½ C EVOO
- 2 ½ Tbsp. Apple Cider Vinegar
- ½ Tsp. Sea Salt
- ¼ Tsp. Turmeric
- ¼ Tsp. Black Pepper
DIRECTIONS
- Chop off the end portions of the stalks on the broccoli and discard them. Roughly chop the remaining florets / stalks and add them to the food processor. (In 2 batches if necessary) Add a tbsp. of cold water. Pulse until thoroughly broken up. A dense, powdered look is what you want.
- Combine all ingredients in a large mixing bowl. Stir to combine, taste and adjust seasoning if desired.
- Transfer to a serving bowl. Serve & Enjoy!
