Broccoli Slaw
INGREDIENTS

  • 2 Heads of Broccoli
  • ½ Red Onion, diced
  • 1 Red Bell Pepper, diced
  • 1 stalk Celery, diced
  • 1 Carrot, peeled & shredded
  • 2 cloves Garlic, grated / minced
  • 1 Tbsp. Fresh Chives, chopped
  • ¼ C Fresh Parsley, chopped
  • ½ C EVOO
  • 2 ½ Tbsp. Apple Cider Vinegar
  • ½ Tsp. Sea Salt
  • ¼ Tsp. Turmeric
  • ¼ Tsp. Black Pepper
DIRECTIONS
  1. Chop off the end portions of the stalks on the broccoli and discard them. Roughly chop the remaining florets / stalks and add them to the food processor. (In 2 batches if necessary) Add a tbsp. of cold water. Pulse until thoroughly broken up. A dense, powdered look is what you want.
  2. Combine all ingredients in a large mixing bowl. Stir to combine, taste and adjust seasoning if desired.
  3. Transfer to a serving bowl. Serve & Enjoy!
RECIPE BACKSTORY
This salad takes on a coleslaw like quality when dressed. Breaking down the broccoli gives you more broccoli per serving of salad. It retains its crispiness and makes for a refreshing salad!
