Bok Choy, Carrot and Green Apple Slaw
  • 1 lb. bok choy (4-6 stalks)
  • 2-3 green apples, peeled
  • 3 large carrots, peeled
  • 1 T. fresh ginger, peeled and grated
  • 1 T. sugar/Splenda
  1. Split the stalks of bok choy and then slice slaw like. The apples are julienned using my Zyliss mandoline. Failing to have that, just use a knife and make apple matchsticks. If this process is going to take a long time place the apples in water and lemon juice to prevent discoloration. The carrots can also be julienned or just shredded.
  2. Place the ingredients in a bowl, and add the ginger and sugar. Toss.
