Blueberry Oat Muffins

INGREDIENTS
  • 1 1/4 cup flour
  • 1 cup quick cooking oats
  • 1/2 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 egg whites
  • 1/2 cup water
  • 1/3 cup oil
  • 1 cup blueberries
  • TOPPING
  • 2 tbs. sugar
  • 1/4 tsp. sinnamon
DIRECTIONS
  1. In a bowl, combine the first six ingredients.
  2. In another bowl, beat egg whites, water, & oil.
  3. Stir into dry ingredients just until moistened.
  4. Fold in blueberries.
  5. Fill muffin tins 3/4 full.
  6. Combine sugar & cinnamon; sprinkle over muffins.
  7. Bake at 400 for 18-22 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes.
