Blue Berry Muffins

  • 1 cup milk
  • 1/4 cup oil
  • 2 cup flour
  • 2 tbsp sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup blueberries
DIRECTIONS
  1. 1. Preheat oven to 400 degrees
  2. 2. Grease bottoms of 12 medium muffin cups
  3. 3. In a medium mixing bowl, beat eggs; stir in milk and oil
  4. 4. In a small mixing bowl, combine flour, sugar, baking powder, and salt
  5. 5. Add dry ingredients to liquid ingredients. Stir just until flour is moistened. Batter should be lumpy
  6. 6. Fold blueberries into batter
  7. 7. Fill muffin cups 2/3 full
  8. 8. Bake for 20-25 minutes until golden brown
  9. 9. Remove from pan. Serve warm
