Blackeyed Pea Cornbread

INGREDIENTS
  • 1 lb. sausage
  • 1 onion, chopped
  • 1c. corn meal
  • 1/2c. flour
  • 1t. salt
  • 1/2t. bkg. soda
  • 2 eggs, beaten
  • 1c. buttermilk
  • 1/2c. oil
  • 1 (4oz.) can green chili, drained
  • 3/4c. cream corn
  • 1 (15oz) can blackeyed peas (w/jalepenos opt.)
  • 2c. grated cheddar
  • jalepenos, finely chopped (opt)
DIRECTIONS
  1. Preheat oven to 350. Grease 9x13 pan.
  2. 2.Brown sausage. Drain grease.
  3. 3.Combine meal, flour, salt and soda.
  4. 4.In another bowl, beat egg, buttermilk, and oil.
  5. 5. Combine with dry ingredients. Batter does not need to be smooth.
  6. 6. Add remaining ingredients.
  7. 7. Pour into pan adn cook 50-55 min.
  8. I frequently double the recipe then do one with mild sausage and no peppers for the kids. The other I use hot sausage, jalepeno peas, and jalepenos. This dish also freezes well.
