  • 6 c. all-purpose flour
  • 1 tsp. salt
  • 3 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 2 tsp. ginger
  • 1/2 tsp. cloves
  • 1 lb. lard
  • 2 eggs
  • 1/2 c. sweet wine or orange juice
  • Cinnamon Sugar Mixture
  • 1 c. sugar
  • 2 Tbsp. cinnamon
DIRECTIONS
  1. 1. Whip lard until creamy (rising up)
  2. 2. Add sugar, sparingly until gone
  3. 3. Add spices, whip again thoroughly
  4. 4. In a separate bowl, beat eggs into wine or juice, then add to batter and whip
  5. 5. Sift together flour, baking powder, and salt and then add to batter, as if making dough for biscuits, working by hand
  6. 6. Roll dough onto floured counter top (or between wax paper) to 1/2 in. thick and cut using glass or cookie cutters (can also use cookie press
  7. 7. Place cookies onto ungreased cookie sheet and bake at 400°F for about 8-10 minutes
  8. 8. Roll cookies in cinnamon sugar mixture as soon as out of the oven
RECIPE BACKSTORY
This is one of our family’s traditional Christmas cookies. My mom has been making these ever since I can remember. This same recipe has been passed down from generation to generation. Since the first Spanish colonists rode into the state, biscochos have been a NM tradition for memorable occasions such as weddings, quinceñeras, and Navidad. The holidays just would not be the same without them.
