Banana Oat Bran Muffins

  • 1 cup unbleached flour
  • 3/4 cup oat bran
  • 1/2 cup whole wheat flour
  • 1 T. baking powder
  • 1/2 t. salt
  • 1-2 T. flax meal
  • 1/2 cup (1 large) ripe mashed banana
  • 1/3 cup oil
  • 1 large egg, at room temperature
  • 1/2 cup packed light brown sugar
  • 2 T. unsulphured molasses
  • 1/2 cup buttermilk
  • 1/2 cup pecans
DIRECTIONS
  1. Preheat the oven to 400 degrees.
  2. Arrange muffin cups in baking tin.
  3. In medium bowl, stir together both flours, oat bran, baking powder & salt.
  4. In a separate bowl, beat together remaining ingredients until well combined.
  5. Make a well in the dry ingredients and stir in the liquids with a few deft strokes- do not beat.
  6. Fold in the pecans with the last few strokes.
  7. Bake for 8 minutes at 400 degrees, then reduce the heat to 375 degrees and cook for 9 minutes more. Allow muffins to cool for 5 minutes in the tin before serving. Spread with butter, yogurt or honey.
