Baked Rigatoni with Feta
INGREDIENTS
  • 12 oz. Rigatoni pasta
  • 4 plum tomatoes, chopped (I add a lot more)
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella
  • 1 1/2 tsp. dried thyme
  • 1 cup whipping cream
  • Salt and Pepper
DIRECTIONS
  1. Preheat oven to 375. Butter a 13 x 9 glass dish. Cook pasta according to package, drain and place in dish. Mix all ingredients except cream with the pasta carefully, then pour cream over. Sprinkle with salt and pepper. Cover with foil and bake 15 min, then stir and cover again to bake 30 min more.
RECIPE BACKSTORY
Yummy pasta dish good for cool weather. I have tried this recipe with cooked sausage and it is even better, it gives it just a little extra flavor and more texture. I also like to somewhat layer the ingredients in the pan to get them more evenly distributed. This is from my friend Kelli V.
