Baked Beans

  • Preparation Time: 20 minutes *Plus beans soak overnight
  • 1 pound dry navy or pea beans
  • 6 cups water
  • 1/2 pd salt pork, cut into 1/2 " dice
  • 1 small onion peeled
  • 1/3 cup molasses
  • 1/4 cup sugar
  • 1 teaspoon dry mustard
  • 1/4 teaspoon pepper
DIRECTIONS
  1. Soak beans overnight in water.
  2. Place beans with your soaking water in large kettle (add more water to cover if needed).
  3. Bring to boil; lower heat and simmer till beans are tender. Drain, reserving liquid.
  4. Place salt pork, onion, and beans in 2-quart bean pot or casserole dish.
  5. Combine molasses, sugar, mustard, pepper in one cup of reserved liquid.
  6. Pour over beans , stir thoroughly.
  7. Add just enough bean liquid to cover beans.
  8. Cover pot or casserole and bake at 300'F for 2 hours.
  9. Add liquid if needed, stir and continue baking 1 1/2 to 2 more hours until beans are tender.
  10. Bake uncovered for last 1/2 hour.
