Bacon Dressing

INGREDIENTS
  • 6 or 7 slices bacon, chopped
  • 3 Cups water
  • 3/4 Cup cider vinegar
  • 2 Tbls. chicken bouillion
  • 1 1/2 Cups sugar
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 Cup onion, chopped
  • 1/2 Cup flour
DIRECTIONS
  1. In skillet, cook bacon until
  2. browned. Using slotted
  3. spoon, remove bacon and set
  4. aside; reserve drippings.
  5. In large saucepan, combine
  6. water, vinegar, bouillion,
  7. sugar, salt and pepper.
  8. Bring to a boil over medium
  9. heat. Add bacon. Saute'
  10. onion in bacon drippings
  11. until soft but do not
  12. brown. Stir in flour and
  13. cook for 2 - 3 minutes to form
  14. roux. Add roux to sauce,
  15. blending until smooth. Cook
  16. for 5 minutes. Store in
  17. refrigerator. Serve on
  18. chopped vegetables (spinach,
  19. potatoes etc.)
  20. Yield: 4 - 5 Cups
