Awesome Turkey Tetrazzini

  • 1/2 8 oz pkg medium egg noodles
  • 2 cups leftover diced turkey
  • 6 T of butter
  • 6 T of flour
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp celery salt
  • 2 cups turkey stock
  • 1 cup heavy cream, scalded
  • 1/8 tsp sherry flavoring or 1/2 cup sherry liquor
  • 1-6 oz can broiled mushrooms
  • 1/3 cup toasted almonds
  • 3 T minced parsley
  • 1/2 cup grated Parmesan cheese
DIRECTIONS
  1. Cook noodles in boiling, salted water until tender.
  2. Drain.
  3. Melt butter & add flour & blend.
  4. Add seasonings & stock & cook over low heat, stirring constantly until thick.
  5. Remove from heat.
  6. Stir in cream, sherry flavoring, mushrooms, almonds & parsley.
  7. Alternate layers of noodles, turkey, mushroom sause in a greased 2 quart casserole.
  8. Top with cheese.
  9. Bake uncovered in moderate oven (350)
RECIPE BACKSTORY
This delicious dish was a standard, after Thanksgiving recipe. This recipe used the left over turkey from Thanksgiving. It was given to Myrtle by her sister, whose husband raised turkeys on a farm in Minnesota. Submitted by: Gretchen Mahin
