Asparagus Bundles
  • Nice tender fresh asparagus
  • 2 teaspoons unsalted butter
  • 1 teaspoon freshly squeezed lemon juice
  • long green onion tops, or chives, or a strip of roasted red bell peppe
  1. Prepare the asparagus, wash it well, and place it in a microwave safe dish. Cover. Microwave on high, using only 2 minutes per pound of asparagus.
  2. Do not overcook. In meantime, combine butter and juice and when asparagus is done, season with the lemon butter.
  3. Wrap and tie 3-5 asparagus spears with the onion tops and arrange on serving platter.
