Artichoke Pasta Salad
INGREDIENTS
  • 1/2 lb corkscrew noodles, cooked
  • 2 jars of artichoke hearts (reserve liquid) chopped
  • 1/3 cup celery, diced
  • 1 medium tomato, diced
  • 1/2 cup red onion, diced
  • 1 tbls red wine vinegar
  • 1/2 cup parmesan cheese, grated
DIRECTIONS
  1. Combine all ingredients; chill
  2. If desired, add diced bell peppers (red, green, orange, yellow) and / or chopped salami

I remember falling in love with this recipe at my baby shower. Thank God the hostess gave me the recipe so that I could still make it 20 yrs later.
