Applesauce Cupcakes

  • 1 3/4 cups sifted all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp grated lemon peel
  • 2 Tbls lemon juice
  • 2/3 cup evaporated milk
  • 2/3 cup applesauce
DIRECTIONS
  1. Sift together flour, baking powder, spices, soda & salt.
  2. Cream butter & sugar until fluffy.
  3. Add egg & lemon rind; mix well.
  4. Stir lemon juice into evaporated milk.
  5. Add dry ingredients & evaporated milk mixture alternately to creamed mixture, beating well after each addition.
  6. Stir in applesauce
  7. Fill paper lined muffin cups 2/3 full with batter.
  8. Bake in preheated 350 degree oven until toothpick insertd in center comes out clean (20-25 minutes)
  9. When cold can be frosted with favorite frosting or eaten plain.
