Applesauce Cupcakes
INGREDIENTS
- Servings: 20
- 1 3/4 cups sifted all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp soda
- 1/2 tsp salt
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 1/2 tsp grated lemon peel
- 2 Tbls lemon juice
- 2/3 cup evaporated milk
- 2/3 cup applesauce
DIRECTIONS
- Sift together flour, baking powder, spices, soda & salt.
- Cream butter & sugar until fluffy.
- Add egg & lemon rind; mix well.
- Stir lemon juice into evaporated milk.
- Add dry ingredients & evaporated milk mixture alternately to creamed mixture, beating well after each addition.
- Stir in applesauce
- Fill paper lined muffin cups 2/3 full with batter.
- Bake in preheated 350 degree oven until toothpick insertd in center comes out clean (20-25 minutes)
- When cold can be frosted with favorite frosting or eaten plain.
