Apple Puff Pancake

- eggs
- 1 1/4 cups milk
- 1 cup flour
- 3 T sugar
- 2 tsp vanilla
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/2 cup butter
- 2 apples peeled and thinly sliced
- 3 - 4 T brown sugar
DIRECTIONS
- Preheat oven to 425
- In blender mix eggs, milk, flour, sugar, vanilla, salt and cinnamon.
- Melt butter in a 12 inch quiche pan or a 9 x 13 baking dish in the oven.
- Arrange apple slices in baking dish.
- Return to oven until the butter sizzles.
- Watch closely.
- Do not let butter brown.
- Removed dish from oven and immediately pour batter over apples.
- Sprinkle with brown sugar.
- Bake in middle of oven for approximately 15-20 minutes or until puffed and brown.
- Serve immediately.
- Can serve with syrup.
