Apple Pie
  • Cooking Time: 50 min
  • Servings: 8
  • Preparation Time: 20 min
  • 6 C ( 2 lbs) thinly sliced, peeled apples (Cortland or Mac)
  • 1/2 to 3/4 C sugar
  • 2 Tbsp all purpose flour
  • 1/2 to 1 tsp ground cinnamon
  • Dash ground nutmeg
  • Pastry for double crust pie
  • 1 Tbsp butter
  1. If apples lack tartness, sprinkle with 1 Tbsp lemon juice, if desired. Combine sugar, flour, cinnamon, and nutmeg. (For a very juicy pie, omit the flour)
  2. Add sugar mixture to the sliced apples; toss to coat fruit.
  3. Fill a pastry-lined 9 inch pie plate with apple mixture; dot with butter. Adjust top crust. Seal and flute edge. Sprinkle some sugar on top, if desired.
  4. Cover pie edge with foil. Bake in a 375 oven for 25 minutes. Remove foil and bake for 20 - 25 minutes more or til crust is golden. Cool on wire rack.
This recipe is from the Good Housekeeping cookbook, and is the closest I could find to my mother's apple pie.
