Aloo Masala Bombay Sandwich

- For the Potato Filling:
- 2 boiled potatoes (roughly chopped)
- 1 tsp cumin powder
- ¼ tsp turmeric powder
- 1 green chili
- ½ tsp mustard seeds
- Salt to taste
- 2 tbsp oil
- Few curry leaves
- For the sandwich:
- Few slices of bread
- Few slices of onions
- Few slices of cucumbers
- Few slices of tomatoes
- Butter
- Green chutney (optional but recommended)
- Cheese (optional)
DIRECTIONS
- For the Potato Filling:
- 1. In a pan, heat the oil.
- 2. Add the mustard seeds and let it crackle.
- 3. Add the potatoes, cumin powder, turmeric powder, chili, salt and curry leaves.
- 4. On a low flame, mash the mixture until fully incorporated.
- 5. Switch off the gas. The mixture is ready.
- For the Sandwich:
- 1. Heat the sandwich maker/griller.
- 2. Take two slices of bread and spread a thin layer of butter and chutney to both slices.
- 3. Add the potato filling and close the sandwich.
- 4. Place the sandwich in the griller until crispy (about 3 minutes).
- 5. Take out the sandwich and open it. Add the tomatoes, onion, cucumber and cheese.
- 6. Close the sandwich and serve!

This sandwich is a popular type of street food in India. I tried to make my own version at home and this is the recipe. This recipe is really easy and quick to make! All it takes is a few ingredients. The potato filling makes any boring sandwich a lot better. You can add whatever veggies that you want in your sandwich. I just included the ones I added in mine.
