Almond Roca
  • 1 cup chopped almonds
  • 1 cup butter
  • 1 cup sugar
  • 1/3 cup brown sugar
  • 2 Tbsp water
  • 1/2 tsp baking soda
  • 6-12 oz chocolate chips
  1. Sprinkle 1/2 cup almonds in the bottom of a buttered 9" X 13" pan.
  2. Melt butter in a medium saucepan then add both sugars and water. Bring to boil stirring constantly until for 7-10 minutes until candy reaches 300 degrees F on candy thermometer or forms a brittle ball when dropped in a glass of cold water.
  3. Remove from heat and immediately add baking soda then pour over almonds in pan. Spread.
  4. Put chocolate chips over top of candy layer and allow to melt for a few minutes. When glossy spread out and smooth.
  5. Sprinkle remaining 1/2 cup of almonds over warm chocolate layer and press in a bit.
  6. Let cool then break into pieces.
This is more delicious than store-bought Almond Roca. It is so simple to make and never lasts long around my place!
