ARTICHOKE AND SPINACH FRITTATA

INGREDIENTS
  • 1 (6 oz.) jar marinated
  • artichoke hearts or bottoms
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 4 eggs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 pkg. frozen chopped spinach,
  • cooked, drained and pressed
  • dry
  • 1 c. grated Parmesan cheese
  • 1 tsp. minced parsley
DIRECTIONS
  1. Drain oil from artichoke hearts into small skillet. Add
  2. onion and garlic; saute until onion is transparent. Set aside.
  3. Meanwhile, in a medium bowl beat eggs until foamy. Dice
  4. artichoke hearts and add to eggs along with onion and garlic
  5. mixture and all remaining ingredients. Mix well. Pour into
  6. greased 9-inch square baking pan. Bake in preheated 325 degrees oven
  7. for 25 minutes. Cool slightly. Cut into 25 squares. Serve
  8. warm or cold.
