Santa Fe Chicken

  • 1 lg. onion; chopped
  • 1 T. butter
  • 1-1/4 c. chicken broth
  • 1 c. salsa
  • 1 c. uncooked long grain rice
  • 1/8 tsp. garlic powder
  • 4 boneless, skinless chicken breast halves
  • 3/4 c. shredded cheddar cheese
  • chopped fresh cilantro to garnish
DIRECTIONS
  1. In a large skillet, saute onion in butter until tender.
  2. Add broth and salsa; bring to a boil.
  3. Stir in rice and garlic powder.
  4. Place chicken over rice; cover and simmer for 10 minutes.
  5. Turn chicken; cook 10-15 minutes longer or until meat juices run clear.
  6. Remove from heat.
  7. Sprinkle with cheese; cover and let stand for 5 minutes.
  8. Garnish with cilantro.
