(gf) Lemon Poppy Seed Biscotti

INGREDIENTS
  • 1.5 c brown rice flour
  • 2/3 c almond meal
  • 1/2 c poppy seeds
  • 3/4 lemon juice
  • 1/2 brown sugar
  • 1/4 c honey
  • 3 eggs
  • 1 tsp guar gum
  • 3 tsp powder
  • 1/4 c water if necessary
DIRECTIONS
  1. Preheat the oven to 375 degrees
  2. sift all dry ingredients together
  3. add wet to dry
  4. knead together the dough until it forms a single ball and cut it into four equal pieces
  5. Roll the ball into a log and lightly flatten it onto a lined jelly sheet.
  6. Repeat with the rest of the dough
  7. Bake for 24 minutes.
  8. turn your oven down to 250 degrees. Allow biscotti to cool for 15 minutes
  9. Cut logs into diagonal slices and
  10. Bake for 5 to 7 more minutes
