Zucchini Quiche

4 cups thinly sliced, unpeeled zucchini
1 cup coarsely chopped onion
1/2 cup butter
1/2 cup chopped parsley or 2 TBSP dried parsley flakes
1/2 tsp salt
1/2 tsp black pepper
1 tsp chopped garlic
1/4 tsp dried oregano
2 eggs, beaten
8 oz. shredded mozzarella cheese
2 tsp dijon mustard
Pillsbury pre-made pie crust
Directions

Trim and pinch edges of pastry
Spread mustard on dough
