ZUCCHINI CAKES

Why I Love This Recipe
When you have an abundance of zucchini in the garden this is a great way to use them and is not a cake or loaf. Old Bay seasoning gives these cakes their unique taste.
Ingredients You'll Need
2 cups shredded zucchini
2 Tbsp. finely minced onion
1 Tbsp. mayonnaise
3 egg whites
4 Tbsp. flour
1 tsp. Old Bay seasoning
1 cup seasoned bread crumbs
1/4 cup bread crumbs for dipping
Directions
Mix zucchini, 1 cup crumbs, onions, egg whites, mayo, flour, and Old Bay together.
Form patties and dip into the additional 1/4 cup crumbs, patting them in.
Fry in a bit of butter or canola oil until golden brown.
Makes about 4-6 patties.
